- 1 x 227g pot of A&T Blue Swimmer Special or Claw Meat
- 2 Garlic cloves, crushed
- 1/2 Red onion, finely sliced
- 2 Spring onions, finely sliced
- 1/4 Cup bean sprouts
- 2 Tbsp finely chopped fresh coriander leaves
- 1 Long red chilli, deseeded, thinly sliced
- 2 Tsp peanut oil
- 2 Tbsp of freshly squeezed lime juice
- 8 Cos lettuce leaves
- 1 Tsp fish sauce
- 2 Tbsp sweet chilli sauce
- Place crab meat, spring onion and coriander in a bowl and gently combine. Cover bowl and place in refrigerator.
- Combine Peanut oil, lime juice, onion, garlic, bean sprouts, chilli, fish sauce, sweet chilli sauce in a bowl and mix. Add to crab mixture and gently combine.
- Place lettuce leaves on a serving platter. Top each leaf with 2 tablespoons of crab mixture. Enjoy
